Lentils with Chorizo and Black Pudding
This typical Spanish lentils with chorizo recipe is ideal for the family. It has a high nutritional value and is ideal for the children since, let’s be honest, are less likely to eat their veggies
Ingredients for lentils with chorizo recipe (serves 6)
- 600g of lentils
- 350 g potato
- 250 g of chorizo
- 2 small blood sausages
- 3 green peppers (Italian)
- 1 carrot
- Half an onion
- 3 garlic cloves
- 4 tablespoons of tomato sauce
- Olive oil
- Water
- Salt
1) Start by putting the lentils in a saucepan and then pour the water for lentils with chorizo .
The proportion will be slightly more than 3 parts of water for each one of lentils. We will light the fire and while the water is heating, we will peel and cut into pieces the potatoes, the carrot, the onion (this will go whole), the green peppers (we will only remove the seeds and cut them into strips) and the garlic (which they will go with the skin but previously crushed with a knife).

2) Add a handful of salt and wait for it to come to a boil.
Then we will lower the heat so that the lentils cook over low heat, just enough to boil a little. At that moment we will cover the casserole and wait long enough for the pepper, carrot, and onion to cook. We must control the fire so that it does not stop boiling, or boil too much. If you see that they dry out, you will have to heat water in the microwave and add it. We will do it with hot water so as not to cut the cooking. When we have the vegetables cooked, we will remove them to a measuring glass with a little cooking broth and we will grind it all, returning it to the casserole right after.
3) Mix slowly
So as not to undo the lentils and then add the chorizo (cut into slices), the black pudding (whole), and the fried tomato. We will leave cooking until the lentils are perfectly cooked. Once they are, we will turn off the heat and let them rest for 15 minutes with the saucepan covered.
